Molecular gastronomy

With Heston Blumenthal’s popular Feasts programme showing us what weird and wonderful things you can do with your cooking, it didn’t take long for the corporate market to jump onto the trend with Altitude being the first venue in Europe to offer molecular catering from Bubble Food.

The menu contains dishes such as nitrogen poached matcha tea, grapefruit mousse, quail trifle in a jar with foie gras, cuban cigar panacotta, and cocktails like caiprinha bubbles with blue raspberry candy floss.

And with former D:Ream front man and physicist Brian Cox, presenter of BBC’s Horizon, causing a flutter amongst the ladies, it seems science has never been so cool.
